Ingredients: Makes 6 servings
3 cup Red Cabbage, shredded
1/2 cup Red Onions, julienne sliced
4 tbsp Dried Cherries
1/4 tsp Salt
1/8 tsp Black Pepper, ground
3 tbsp Sherry Vinegar
1 tsp Olive Oil
1/4 tsp Salt
1/2 tsp Sugar
1 tsp Lime Juice
1 tsp Jalapeno Peppers, minced
1/8 tsp Black Pepper, ground
Directions:
- Toss the cabbage with onions, cherries, salt, and pepper; allow to sit in a colander for about 2 hours until the cabbage bleeds out water.
- Combine vinegar, oil, salt, sugar, lime juice, jalapeno and pepper to create a dressing.
- Toss dressing with the cabbage. Chill.
