Cumin-Chili Roasted Chayote and Zucchini

Ingredients: Makes 5 servings

Ingredients

2 cloves garlic, minced
1 ½ tsp canola oil
2 ounces red onion, diced
1 tsp chili powder
1 tsp ground cumin
1/8 tsp ground black pepper
1/8 tsp salt
8 ounces chayote squash, peeled, ½-inch cubes
8 ounces zucchini, peeled, ½-inch cubes

Directions:

  1. Preheat oven to 400 degrees F.
  2. In a large bowl, toss all ingredients together and spread in single layer on baking sheet. Bake 30-40 minutes, tossing every 15 minutes, until vegetables are tender.
