Quinoa Mango Coconut Greek Yogurt Parfait

Ingredients: Makes 1 serving


1 cup cooked quinoa, chilled
1/3 cup plain soy milk
1/4 tsp vanilla extract
1/4 cup plain nonfat greek yogurt
1/4 cup diced mango
1 TBSP shredded coconut


  1. In a small bowl, stir together  cooked quinoa, soy milk, and vanilla extract.
  2. Top with plain greek yogurt.
  3. Sprinkle with mango and garnish with coconut.
