Ingredients: Makes 9 servings
1 tablespoon maple syrup
1 tablespoon dijon mustard
2-1/2 tablespoons apple cider vinegar
1 tablespoon tahini
1/8 teaspoon cayenne pepper
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup old fashioned oats
1/3 cup dry quinoa
1/2 cup hulled pumpkin seeds (pepitas)
2 tablespoons sesame seeds
2 tablespoons unsalted sunflower seeds
Directions
- Preheat oven to 325F degrees. Line a sheet pan with parchment paper.
- In a medium bowl, whisk together maple syrup, mustard, vinegar, tahini, cayenne, salt, and pepper.
- Add oats, quinoa, pumpkin seeds, sesame seeds, and sunflower seeds. Spread mixture evenly over sheet pan and bake 20-30 minutes, tossing every 10 minutes. Bake until golden brown. Allow to cool completely.
